Apple Cinnamon Pupcakes
- 2 3\4 cups water
- 1\4 cup unsweetened applesauce
- 1\4 teaspoon vanilla
- 1 egg, slightly beaten
- 4 tablespoons honey
- 4 cups whole wheat flour
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1 cup sliced fresh apples
Preheat oven to 350 degrees F. Lightly grease
muffin
tin, or use aluminum foil baking cups (do not use paper baking cups).
Mix water, applesauce, vanilla, egg, and honey
thoroughly. In separate bowl combine flour, baking powder, and
cinnamon.
Add wet ingredients to dry ingredients; when they are completely mixed,
add apples.
Bake 30 minutes, or until a toothpick inserted
comes out dry. Store in an airtight container. Makes around 18 medium
sized
pupcakes.


Savory Garden Snacks
- 2-2 1\2 cups minced parsley
- 1\4 cup shredded carrots
- 1\4 cup grated parmesan cheese
- 2 tablespoons olive oil
- 2 3\4 cups whole wheat flour
- 2 tablespoons rolled oat, or bran
- 2 teaspoons baking powder
- 1 1\4 cups of water
Preheat oven to 350 degrees, rack on middle level.
Lightly grease baking sheet.
Stir together parsley, carrots, cheese, and
oil.
Combine dry ingredients and add to veggies. Gradually add water, mixing
well. Make a moist but not wet dough. Knead for one minute.
Roll dough to 1\2 inch thickness. Cut out with
cookie cutter. Bake for 15 minutes for soft cookie; 20- 30 minutes for
harder cookie. Remove from sheet to cool. Store in airtight container.
